South Tyrolean cuisine is a peasant cuisine. In the old days, when many people still ran their own farms, it gave rise to many traditional recipes have been passed down from generation to generation.

There are two delicacies especially worth mentioning in the Val Pusteria. One are the "Niggelan", a deep-fried dessert made of yeast dough, and the other are the "Pusterer Tirtlan". The latter are made from a dough of flour, salt, egg and water and filled with ricotta and spinach, ricotta and onions, cabbage or even with nuts or poppy seeds. The round doughnuts are baked in hot fat and served in soup or just plain.

By the way: There are two well-known breweries in Val Pusteria that are well worth trying: the Rienzbräu brewery near Brunico and the Puschtra Freiheit brewery in Villabassa
